The Prep Kitch’n Kitchen Rules
To keep our shared kitchen safe, clean, and efficient for everyone, please follow these kitchen rules at all times. Failure to comply may result in warnings, fines, or loss of kitchen privileges.
Safety First!
✔ Wear Proper Attire: Closed-toe, non-slip shoes and hair restraints are required.
✔ Use Equipment Safely: Follow manufacturer instructions & report malfunctions immediately.
✔ Fire Safety: Never leave open flames or hot equipment unattended. Fire extinguishers are available—know their locations!
✔ No Unauthorized Guests: Only approved members or staff are allowed in the kitchen.

Respect Kitchen Time & Space
✔ Be On Time: Use only your reserved kitchen hours—overtime fees apply.
✔ Shared Space Etiquette: Be mindful of others working around you; keep noise & disruptions to a minimum.
✔ No Personal Storage: All ingredients & equipment must be removed after use unless you have assigned storage.
Food & Storage Guidelines
✔ Label Everything: All food must be properly labeled with name & date.
✔ No Expired Items: Any expired or spoiled food will be discarded.
✔ Respect Cold & Dry Storage Limits: Store only within your assigned space.
Report Issues Immediately
✔ Equipment Malfunctions? Notify management ASAP.
✔ Accidents or Spills? Clean up immediately and report any major incidents.
✔ Health & Safety Concerns? We take them seriously—please bring them to our attention.
Professionalism & Conduct
✔ Respect Staff & Other Members: This is a shared space, so be professional and courteous.
✔ No Outside Food Sales in the Kitchen: The kitchen is for preparation, not retail sales.
✔ Follow Local Health Codes: You must comply with all food safety regulations.
Onslow County Department of Environmental Health
✔ All shared use vendors operating out of the establishment shall apply for a permit to operate from Onslow County Department of Environmental Health and be approved prior to use.
✔ An updated operating schedule must be submitted to the Onslow County Department of Environmental Health on a monthly basis by each shared use vendor.
✔ Person in charge on each shift shall be a certified food protection manager who has passed an ANSI approved food safety course.
✔ The reservice of food is prohibited. Once a catered order has been transported all foods will be considered to have been served.
✔ Time/temperature control for safety food cold held shall be maintained at 41F or below and time/temperature control for safety food hot held shall be maintained at 135F or above during transport by means of insulated chests or mechanical refrigeration and/or hot holding units.
✔ Due to the limited availability of equipment and workspace each permit holder shall purchase ingredients for catered orders no greater than 24 hours in advance. Establishment permittee shall maintain copies of all food invoices.​​​​​​​​
Failure to comply with these rules may result in penalties, fines, or suspension of kitchen access.
